Pam's Palate and Potpourri

Quite often, my kids, nieces and other people will ask me to share recipes. I decided to try my hand at blogging to share recipes, craft ideas, quilting ideas, things ...I have a whole "potpourri" of ideas  to share. In my spare time, I  like to cook, quilt, and read.  This past Christmas I gave co-workers and family breads for gifts. My niece, Kara, asked me to share my recipe. She has never made homemade bread before and asked me to "walk her through the recipe". That is why I decided to give this a shot! The recipes I share will be recipes that I've tried, family recipes and traditional recipes. Typically, I set aside one night a week for what I have always called, "Recipe Night". This is the time I peruse cookbooks and websites to try out new recipes. My husband is always willing to try these out. Sometimes they turn out, sometimes they are disasters! I hope to share some "Recipe Night" recipes, too. The successful ones, that is! Hopefully someone will try out some of the recipes and ideas that I share!

Put the unleached white flour, whole wheat flour , wheat germ, ground flax, and salt into the bread machine.

Add the honey and melted butter.

Add the packed brown sugar.

Add the tepid water. No need to use a thermometer....if is too warm to touch, it will be too hot and it will kill the yeast. I like to think of it as the same temperature of warm water used to wash your hands.

Add the yeast.

Choose the dough setting on your machine.

The dough should not stick to the side of the bread machine. If the dough is too sticky simply add a tablespoon of one of the flours. It should be the consistency of playdough.

I never bake bread in my machine.  I don't like the texture of the crust and the funky blade hole in the bottom of the bread. I also think the slices are too big for a serving.

This is how the dough looks after the cycle is complete. Take the dough and shape it so it fits into the bottom of the bread pan. You want to pat it into the pan so there aren't any air holes in the baked bread  This recipe makes a LARGE loaf of bread. I like to make two loaves, one regular loaf pan and a small loaf pan. You can also make it into buns, dinner rolls, or pizza crust.

Notice the shape that I made it.

Cover the dough and let rise in a warm, non-drafty place until double in size.
